Microgreen Power Salad

Ingredients:

  • Handful of micro broccoli
  • Handful of micro radish
  • Handful of pea tendrils
  • Sliced cucumber and cherry tomatoes
  • Feta or goat's cheese
  • Lemon juice, olive oil, salt & pepper

Instructions:

  1. Combine microgreens and salad vegetables in a bowl.
  2. Crumble cheese on top.
  3. Drizzle with olive oil and lemon juice.
  4. Season to taste and serve.
