Pasta with Pea Tendrils & Lemon

Serves: 2

Ingredients:

  • 150g linguine or spaghetti
  • Handful of fresh pea tendrils
  • Zest and juice of 1 lemon
  • Olive oil
  • Salt and pepper
  • Optional: grated pecorino or nutritional yeast

Instructions:

  1. Cook pasta according to packet instructions. Drain and return to the pan.
  2. Add lemon zest, juice, olive oil, and a pinch of salt and pepper.
  3. Fold in the pea tendrils while the pasta is still warm to lightly wilt them.
  4. Serve with optional cheese or yeast flakes.
