Pea Tendril & Micro Broccoli Omelette

Ingredients:
- 2 free-range eggs
- Handful of pea tendrils
- Handful of micro broccoli
- Sea salt and black pepper
- Optional: grated cheddar or parmesan
Instructions:
- Whisk eggs with seasoning.
- Pour into a hot, oiled pan and cook gently.
- Add greens just before folding the omelette.
- Serve hot with toast if desired.
